The biotechnological production of antimicrobial metabolites was carried out using Lactobacillus plantarum strains. Two industrial wastes, whey, and wine distilled lees (or vinasses) were assayed in order to make the process economically competitive with regard to the chemical one. The extracts are mainly composed by lactic acid, 3-phenyllactic and bacteriocins. Whey was enzymatically hydrolyzed and the solutions were fermented sequentially or simultaneously. Diadinoxanthin (Ddx) and diatoxanthin (Dtx) are two pigments that belong to xanthophylls family. The availability of Ddx and Dtx on the market is low and up to date limited as they are sold exclusively in small quantities at extremely high prices to be used as HPLC calibration standards. The solution of the above mentioned problems is the 5-step method for the isolation and purification of Ddx and Dtx developed at the Jagiellonian University..

Affinity chromatography was also used with so-called affinity tags. These tags could interfere with the functions of chitinase, and their cut-off was associated with the next step of digestion and purification. The proposed method of Jagiellonian University’s chitinase A purification using affinity chromatography with the involvement of G proteins is fast and efficient single-step. In addition, use of direct conjuction of chitinase and protein G eliminates the need of chitinase tagging, which may disturb protein functions, whereas their cutting requires additional digesting and purifying stage.
