CrushMash is a novel distributed food manufacturing platform combining controlled-environment cultivation, processing and production of nutrient-dense, plant-protein-rich snacks in one localized system. Our first application is “Chips Without Fields” — snacks made from mung beans grown without conventional agricultural fields, with water recirculation and a short production cycle. Unlike conventional snack supply chains, our technology integrates raw-material production and food manufacturing, enabling scalable local production close to consumers in different markets. This creates a new pathway to produce nutritious foods with greater supply-chain resilience and lower dependence on conventional agriculture.
1. Technology Description
CrushMash is developing a distributed food manufacturing platform that combines controlled-environment sprout cultivation, food processing, and finished-product manufacturing in one integrated system.
I have been working with controlled-environment sprout cultivation since 2019. In early 2025, we started developing CrushMash as the next step in this technology. Before CrushMash, I founded and operated a food manufacturing company that combined controlled-environment sprout cultivation with on-site production of soups, salads, snacks, and hot meals. This experience demonstrated the nutritional potential of fresh sprouts, but also showed a major limitation: fresh sprout-based products have a short shelf life and are difficult to distribute at scale.
CrushMash addresses this limitation by transforming sprouted mung beans into shelf-stable, nutrient-dense snacks. Our first commercial application is “Chips Without Fields” — snacks produced from mung beans grown in controlled indoor environments rather than conventional agricultural fields.
The technology is designed around a vertically integrated process:
mung bean seed → controlled-environment sprouting → harvesting → washing → processing → formulation → forming → drying → finished snack.
The system allows the raw material and finished product to be produced within the same localized production model. Our long-term objective is to develop the technology into a modular platform that can be deployed in different countries and licensed to local food manufacturers, enabling local production of the same product technology closer to consumers.
We have developed the technology using our own capital and have not raised external funding for CrushMash. After several years of development, we launched our first industrial production through a contract manufacturing partner in 2026. The current production setup has a capacity of approximately 1,000 packs per day.
The current technical focus is optimization of the drying and processing stage to maximize nutrient retention, achieve the desired texture and shelf life, and maintain competitive production costs at scale.
2. Technical Specifications
The CrushMash technology combines controlled-environment cultivation with food-processing technologies.
Controlled-environment cultivation
Mung beans are grown in dedicated indoor incubators under controlled environmental conditions, including temperature, humidity, irrigation, and atmospheric parameters. The current cultivation cycle is approximately four days.
The cultivation system is designed to provide consistent raw-material quality independent of seasonal field conditions. Water is recirculated within the system to reduce unnecessary water consumption.
Raw-material processing
After cultivation, the sprouted mung beans undergo controlled washing and processing. Our process includes blanching and cooling before further food processing. These stages are designed to improve microbiological safety, control the raw material, and prepare it for conversion into a stable snack product.
Snack manufacturing
The processed sprout biomass is converted into a food formulation and formed into a thin snack structure. The material then undergoes controlled drying/dehydration to achieve the required moisture level, texture, stability, and shelf life.
One of our current R&D priorities is optimizing this stage to balance:
nutrient retention;
texture and sensory quality;
processing time;
energy consumption;
shelf life;
production cost.
Current production
Our current production system has been validated at approximately 1,000 packs per day through contract manufacturing.
We have developed three product directions:
healthy / nutrient-focused;
sweet;
savory / familiar chip-style flavors.
The current product contains approximately 20% naturally occurring protein from mung beans, without added protein isolates. It is gluten-free, soy-free, and dairy-free, with approximately 5–6% fat.
Sprouting naturally reduces certain antinutritional compounds while retaining valuable dietary fiber, vitamins, and minerals.
3. Novel and Innovative Aspects
The main innovation is not simply the use of mung beans as a food ingredient. It is the combination of controlled-environment cultivation and finished-food manufacturing into a localized production system.
Conventional snack production generally depends on agricultural raw materials being produced separately from food manufacturing and transported through multiple stages of the supply chain. CrushMash integrates the production of the raw material with its transformation into a finished food product.
The key advantages are:
1. “Chips Without Fields”
The raw material can be produced in a controlled indoor environment rather than relying exclusively on conventional agricultural fields. This creates an alternative production model for food ingredients.
2. Vertical integration
We control the process from cultivation of the raw material through processing and finished-product manufacturing. This can provide greater control over raw-material consistency, quality and production parameters.
3. Localized manufacturing
The technology is designed to be replicated in different geographical markets. Instead of shipping a finished product or agricultural raw material across long distances, local production facilities could manufacture the product close to consumers.
4. Nutrient density
Our first product combines naturally occurring plant protein with dietary fiber, vitamins and minerals in a convenient snack format. The protein comes naturally from the mung bean rather than being added as a separate protein concentrate.
5. Reduced dependence on conventional supply chains
Local cultivation and manufacturing can reduce dependence on geographically concentrated agricultural production and long-distance transportation of raw materials.
6. Potential resource efficiency
Controlled cultivation and water recirculation provide opportunities to optimize water use and resource consumption compared with conventional agricultural production.
The result is not simply a new snack recipe, but a potential new production architecture for nutrient-dense foods.
4. Applications and Markets
The first commercial application of the technology is nutrient-dense snack production, with “Chips Without Fields” as the initial product.
However, the underlying platform can potentially be applied to a broader range of food products and markets.
Potential applications include:
nutrient-dense snacks;
plant-protein-rich snacks;
alternative snack formats;
functional foods;
children's snack products;
ready-to-eat foods;
ingredients for food manufacturers;
locally produced food products;
food production in regions where conventional agricultural supply chains are less efficient or resilient.
The technology is particularly relevant to large food manufacturers seeking new product categories, alternative raw-material systems, localized manufacturing models, and more resilient supply chains.
Our long-term business model combines finished-product sales with technology licensing. We intend to establish partnerships with food manufacturers in different countries that can deploy the CrushMash production technology locally.
This model could allow a global food company to use one technological platform across multiple markets while adapting production to local conditions.
Our ambition is therefore not simply to build another snack brand. We aim to develop a global technology platform for distributed production of nutrient-dense foods — “Chips Without Fields.”
