Job Description: As a Senior Scientist on the Proteins Science and Technology team, you will drive the development of novel products to support PepsiCo’s global and regional beverages business. Applying your food science knowledge and technical skills to deliver nutrient dense, great tasting products in collaboration with cross-functional partners (Product development, Engineering, Food Safety, Scientific Affairs, Breakthrough Innovation, etc.) that are consistent with PepsiCo Business Objectives.


Responsibilities/Duties:

  • Using scientific methods and technical knowledge to design and execute research projects in the area of food proteins and dairy and non-dairy beverage applications.
  • Creates, oversees and executes research projects to deliver technical solution, leveraging strong expertise in food proteins and/or product formulation.
  • Drives research projects from scoping to benchtop assessments to pilot plant evaluations through to transfer to product development.
  • Aids in the assessment of potential research partners.
  • Develops analytical methodologies for characterization and evaluation of food protein ingredients and dairy and non-dairy beverage systems. 
  • Participates as an active member of cross-functional teams (Product development, engineering, nutrition science, regulatory, etc.) to drive food proteins research projects forward.
  • Leverages partnerships with external and internal experts to resolve technical challenges.
  • Demonstrates technology applicability and potential, leveraging protocept development and presentations for technical and non-technical audiences
  • Performs basic economic evaluations on ingredients, ingredients suppliers, and product formulations to assess viability
  • Coordinates and organizes communication with R&D partners and peers to transfer and implement new technologies.
  • Interact with process engineering, food safety, product development teams to plan and execute pilot plant trials up to pre-commercialization.

Qualifications/Requirements

 

  • M.S. in Scientific discipline (preferred Food Science, Chemical Engineering, Biological Systems Engineering) with 2-4 years of experience working in the food industry preferably in the area of food proteins and/or enzymes. 
  • Experience with dairy or non-dairy products, preferably in ready to drink beverage systems.
  • A proven track record in R&D with hands-on bench capability, pilot plant experience.
  • Proven expertise in utilization of scientific method and critical thinking to drive and deliver results with agility.
  • Technical knowledge in one or more of the following areas: food fermentation, food proteins, enzymatic hydrolysis and/or product formulation as it relates to dairy and non-dairy beverage applications.
  • Demonstrated fundamental understanding of incorporation of business need into technical programs.
  • Self-starter with excellent oral and written communication and presentation skills.
  • Strong leadership skills and the ability to work effectively in cross-functional and global teams.
  • Highly creative with a desire to gain and apply knowledge to new products.
  • Willingness to travel
