New technologies may include the following:
• Taste advantaged salts, other mineral ingredients, or blends that can mask/balance saltiness
• Encapsulation/plating technologies to reduce saltiness perception
• Ion exchange/ion binding to remove salty tasting anions
• Salt receptor blockers

We are seeking new technologies to minimize salt perception in beverages containing electrolytes. New technologies may include the following:

· Taste advantaged salts, other mineral ingredients, or blends that can mask/balance saltiness

· Encapsulation/plating technologies to reduce saltiness perception

· Ion exchange/ion binding to remove salty tasting anions

· Salt receptor blockers

Solution Requirements:

Must-Haves

  • Clear appearance
  • No impact on flavor (undetectable when tasted in water)
  • unacidified, unsweetened (no declaration of acidulants, sweeteners)
  • Proof of concept

Nice-to-Haves

  • GRAS approval

Past work and Out of Scope List:

  • Flavor based masking agents and modifiers were previously evaluated but worth revisiting
  • Salt sources that were screened that did not meet sensory goals:
    • Sodium Citrate
    • Sodium Gluconate
    • Sodium Bicarbonate
    • Potassium Citrate

We are open to a range of collaboration types, but proof of concept is required.
