Since 2001 we have developed new edible coatings to protect ingredients and food products against the oxidation and moderated humidity. These coatings are specially useful in foods with a high content of fat. These coatings both delay the rancidity process and avoid the transfer of the fat. They also permit the encapsulation of some active compounds, specially of the liposoluble ones like vitamins, MUFA, PUFA, sterols, tocopherols, lutein, carotenoids….
