New method for extraction of celiac desease toxic gluten prolamins from foodstuffs (Gluten detection technology kits)

The invention reported here is a far simplified method for the simultaneous extraction of gliadins and glutenins based on the use of solvents of high boiling points, which facilitates the application of elevated temperatures during the extraction process, eliminating the need for the use of a dissociating agent.

It is based on the use of a composition consisting of a solvent with high boiling as compared to other solvents, mixed with an agent capable of the irreversible reduction of disulphide groups, in buffer PH 4-9, with extraction being carried out of greater than 50ª for a duration of more than 2 minutes, facilitates dissolution of the gluten, allowing the gluten content of heat and non-head processed food and beverage products to be quantitatively determined.
